What files need to be edited to customize layout of products on categor y page:

what is the difficulty level of doing this?

The page has 3 tabs which are steps for checkout, I don't need this. Just would like to have similar layout of products listed in category.
This could be taken care of by a single variable product, but it won't be displayed like that.
If you had separate products, you could style the grid to look like that, but you should note that each product has a 'single' view. This site does not have that per option.
