I don't want to move to step 5 and give them the EPP code as I am very unsure of how I would even attempt to step 3 or 4.

In this case, you absolutely have to do step 5 first. You can't do anything on your new WordPress installation without a domain to access it at, and your domain is still directed to WordPress.com.

Once your domain is directed to your new hosting provider (which can then take anywhere from 1 to 48 hours for the domain change to full propagate to all ISPs), you'll be able to do steps 3 and 4 *exactly* as they're described in the guide.

Essentially, WordPress.com's guide is written from the assumption that you're moving a example.wordpress.com blog *without* a custom domain to a new self-hosted WordPress site *with* a custom domain, so in this case you'll need to go a bit out of order.

Their guide is accurate, you just have to approach it from a slightly different direction to start out.
