Question is fairly simple. Why does the current version of WP insist that upgrades happen over a huge security hole, I mean over FTP? What's wrong with just using https? It isn't as if WordPress isn't, you know, running on a web server in the first place

Yeah, you can theoretically use ftp-with-ssl but in practice it's not standard and does not in fact work.
What's up, Automattic? Why insist on obsolete, unnecessary software? (Not that I have a strong opinion or anything.)
