Any Way to Track Anonymized Traffic???

So I got involved in a quantity sum of traffic I am having redirected to my websites but need some input on drilling down on data. The story goes that it is completely visitor data anonymized and EU privacy compliant across the board…..I get IPs on my backend server stat and they track as TOR proxies as a whole and read direct but of course the TOR data is not actual visitor. Claim is EU, CA, US visitors
I am also told some is categorically matched or keyword and social and search platform...
