The products can be sorted by publication date, title, popularity or price. If you want sorting the products in the store pages, by their titles, simply add the "order_by" attribute to the shortcode, for example:

[sell_downloads columns="3" order_by="post_title"]

Tip: The filtering attributes are stored in session variables, so, if you modify the order_by in the shortcode, you should restart the browser to see the results.

About your second question, the answer is yes, select a video file, as the file for demo associated to the product, however, you should use a video file supported by the browsers, my personal recommendation is to use MP4 files.
