Love the plugin!

It doesn't look easy to style the min height of each row in the calendar grid via CSS.

Looks like some of your php is explicitly specifying min-height on some of the table elements.

Any thoughts on how I can do it with the aim of reducing the overall vertical height of calendar grids which e.g. only have one all day event per day.

This is an area we are definitely working to improve on since it is kind of a pain right now.
