We hade some new orders the last few days, but when I look at the stock, the number is still the same as before. He should automatically downward the stock, shouldn't he?

Nop, this only happens when a payment gateway sets the order as paid (in this case change the order status to "processing" and then reduce the stock automatically).
If you are manually changing the order status from "pending" to "processing" or "completed" you need to reduce the stock manually too.
